Hi, I'm Paolo, a sommelier and a huge fan of Italian food and wine.
My passion for wine and Italian cuisine has led me to study, taste, and discover the profound connection between land, products, and people. As a sommelier, I've learned that every wine finds its perfect balance when paired with the right dish, and that behind every pairing lies a story to tell.
Every year, I travel thousands of kilometers by motorcycle, focusing on inland roads and small villages, far from the beaten track, in search of rare products, authentic traditions, and exquisite food and wine.
This spirit of exploration intertwines with my deep passion for the mountains and skiing, as well as for the sea: different environments but equally capable of expressing identity, culture, and flavors, which I experience and celebrate with the same enthusiasm and respect for the land.
