About Me
Hi, I'm Paolo, an Italian sommelier and cook.
My passion for wine and Italian cuisine has led me to study, taste, and discover the profound connection between land, products, and people.
Every year, I ride thousands of kilometers on my motorcycle, focusing on inland roads and small villages, far from the usual tourist routes, in search of rare products, authentic traditions, and exquisite food and wine.
I earned my sommelier certification from the AIS (Italian Sommelier Association), the most prestigious and historic sommelier association in Italy, founded in 1965 and recognized worldwide as a benchmark for wine expertise in Italy. I specialize in practical, results-oriented food and wine strategies for restaurants.

My mission is to bring authentic Italian food and wine culture to the world through professional consultancy services that combine technical expertise, field experience, and a deep passion for quality.
As a sommelier and chef, I work alongside international restaurants and professionals to convey the values of authentic Italian cuisine, thoughtful wine selection, and solid, hands-on training, often far removed from the stereotypes and simplifications prevalent abroad.
My primary goal is to help each business build an authentic and recognizable identity, elevating the level of its gastronomic offerings through coherent wine lists, thoughtful menus, and customized staff training programs.
